Pancakes and Fireworks

Saturday was a nice day off. We started out with homemade pancakes. I used to always buy the multi-grain pancake mix from Trader Joe's, but when I ran out recently I decided to make my own mix instead. I just used the recipe from a basic cookbook I have and made up several bags to have on hand for those groggy mornings when I don't mind stirring, but am too lazy to get out the cookbook and measure individual ingredients. I am the first to admit that I love convenient products, but I always feel a little guilty. This is a happy medium, plus I reuse the bags for more mix later. Here's the recipe if you are interested, you'll probably want to double or triple depending on the size of your family, but this amount is perfect for two:

Pour in bag and shake:

1 cup flour (I use whole wheat)
1 tablespoon sugar
2 teaspoons baking powder
1/4 teaspoon salt


Write these on the bag to mix in when ready to use:
1 cup milk
1 egg
2 tablespoons oil

I just got this new Organic Maple Agave Syrup which is pretty good. I am trying to get away from the high fructose corn syrup version I am used to, but I don't really like straight maple syrup.



After breakfast we did chores around the house and then went to the Irvine Spectrum where I continued my tour of Anthropologies of Southern California. We decided not to keep the baby out late so instead we watched the fireworks from our living room!
